We used to spend our summers grilling and making somewhat complicated meals that we loved. Three kids later I found myself in a huge rut. Our budget has been maxed out going out to eat and extra trips to the grocery store spending money on food that we weren’t using. Then I stumbled upon sheet pan dinners, which are amazing! They have helped me take back control with short prep times and healthy, yummy food!
In just five to ten minutes, I simply cut up a few veggies, potatoes, and some sort of protein, put it on a couple of sheet pans, drizzle with spices and olive oil, and throw it in the oven for thirty minutes. This thirty minutes gives me time to get a few things done while our dinner cooks. It is more manageable as two 2-year-olds claw at my feet in the early evening. These magical sheet pan meals have been a lifesaver to beat the summertime blues of cooking.
This week I am challenging myself to cook a few different recipes to find the ones that we really like. You can keep them low-carb by serving them alone, or with cauliflower rice, or stretch them a little longer with some brown rice. I think they are the perfect summer time dinner and totally budget friendly!
